First edition of this work published in the Collection Antonin Carême, with texts by Appert, Joubert, Bouchard, Leclerc, and by F***, Carême's former secretary. Appert invented the process of preserving food in tin cans. The articles by the other authors relate to wine. The work is illustrated with 5 hors texte plates, 4 of which are fold-outs. Stains throughout.
